Happy Friday

Happy Friday everyone! Vacation is going great keeping me busy! Adam and I have done pretty well food wise and are looking forward to resuming all our healthy habits when we return home.

Here is a yummy salmon recipe I wanted to share:

Ingredients:
  • 1/2 C Plain 0% Chobani Greek Yogurt
  • 2 Tbsp grated ginger
  • 1 tsp wasabi powder
  • 1/2 ripe avocado, smashed
  • 1/2 tsp low-sodium soy sauce
  • salt & pepper, to taste
  • 2 6 oz salmon fillets
Prep:
Whisk together all ingredients, except salmon, in a small bowl. Set aside. Heat grill pan over medium-high heat. Grill salmon for 4 to 6 minutes per side, or until desired doneness.

Serve with vegetable, such as broccoli, asparagus and brown rice or Quinoa.
