Sweets

With summer on the way and motivation to get our summer bodies we need to cut back.  Or do we?  I wanted to share some "sweet treat" ideas, that wont add much to your waistline or blood sugar!


No sugar added ice cream
Ice cream without the guilt... nothing but frozen bananas, spoonful of peanut butter and spoonful of cocoa!


Now for you chocolate lovers

Flourless Brownies (Sugar-Free, Low Carb), per serving there is only 3.5g of carbohydrates


  • 12 ounces unsweetened chocolate
  • 1 cup butter
  • 1 1/2 cups Splenda sugar substitute
  • 4 eggs, large
  • 4 egg yolks, large
  • 1 tablespoons vanilla
  • 3/8 cup cocoa

Directions
1. Preheat the oven to 350 degrees.
2. Melt the chocolate and butter together on stovetop or in microwave.
3. Add the splenda, eggs, egg yolks, vanilla and cocoa, stirring until well blended.
4. Pour into a 9 X 13 inch pan (spray with vegetable spray and dust with cocoa).
5. Bake at 350 degrees for 50 minutes.

That sounds fantastic!

Now onto a great no bake option

LOW CARB NO-BAKE COOKIES - only 2g of carbohydrates per cookie

  • 1 tablespoon butter
  • 3 tablespoons heavy cream
  • 2 teaspoons cocoa
  • Liquid Splenda equal to 2/3 cup sugar
  • 1 tablespoon natural peanut butter
  • 2 tablespoons oats
  • 1/4 cup unsweetened coconut 
  • 1/4 cup almond flour, 1 ounce
  • 1/4 teaspoon vanilla

Directions
1. Bring the butter, Splenda, cream and cocoa to a boil in a very small pot; boil 1 minute, stirring constantly. Stir in the peanut butter until well blended, then stir in the remaining ingredients. Drop onto wax paper (mixture will be crumbly so you may need to shape them with your fingers); chill or freeze until firm.

Healthy Peanut Butter cookies! 

Only 36 calories per cookie! Ingredients: 1 Cup Peanut butter 1 Cup honey 1 TSP baking soda 1 egg Mix the peanut butter and honey first then add in the egg and baking soda. Bake for 10 minutes on 350 degrees. They’re delicious! .... Excellent snack idea!
